This winter delicacy has a laborious process.
It is grown in the high desert. During harvest time, the ears of corn are plucked. A deep pit is dug in the ground and a fire is build to heat up this earth-oven. After hours of heating, the coals are removed and replaced by the ears of corn. 5 gallons of water is poured into the pit and it’s sealed for 12 hours. After 12 hours, the ears of corn are taken out, laid to cool, then the husk is removed and the corn is shucked. All corn kernels are laid out to dry, then stored away for the winter.
